Artichoke or Tomatoes Stuffed with Minted Spinach Pumpkin Tiramisu
Chick Pea A La King Ravioli Pumpkin Sauce
Fennel & Baby Peas in Puff Patry Winter Vegetables
 


CHICK PEA À LA KING
Serves 4

¼ cup olive oil
2 cloves garlic, chopped fine
1 onion, chopped fine
½ pound small white mushrooms, cut into quarters
1 cup unsalted cashew nuts, ground or chopped fine
15 ounce can chick peas
¼ teaspoon marjoram
¼ teaspoon thyme
¼ teaspoon chervil
1 cup rich soy milk Salt and pepper to taste

1. Sauté the garlic, onion, and mushrooms in the oil over low heat until the onions have become soft but not colored.
2. Add cashews and chick peas.
3. Add marjoram, thyme, and chervil. Slowly stir in soy milk.
Serve over brown rice or couscous, made with a touch of cayenne pepper and coarsely-chopped green or red peppers.
