CLASSIC FRIED CATFISH
Yield: 4 Servings

2 cups yellow cornmeal
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
Optional: 1/2 teaspoon garlic powder
4 large catfish fillets or a 4 whole small catfish
Vegetable oil to half fill a deep skillet

1. Sift dry ingredients together.
2. Cut the catfish into fillets or remove the heads, tails and skin from the whole fish and wash the insides well.
3. Heat the oil to 350*F.
4. Dip the fish into the batter and shake off excess. Fry until golden brown. Drain on paper towels.
