Purchase eggs at least one week in advance. |

Fill a pot half-full with cold water. Add eggs directly from the refrigerator. |

Bring to a full boil, uncovered. |

Small eggs: Boil 1 minute. Remove from heat. Leave in water 10 minutes. |

Medium eggs: Boil 2 minutes. Remove from heat. Leave in water 10 minutes. |

Large eggs: Boil 3 minutes. Remove from heat. Leave in water 10 minutes. |

Extra large and Jumbo eggs: Boil 5 minutes. Remove from heat. Leave in water 10 minutes. |

Pour off water and fill pot with cold water. Hit each egg several times to loosen the shell. Return eggs to cold water bath until all have been cracked. |

Peel eggs under cool running water, beginning at the round end. If eggs are very fresh, you will have more difficulty removing the outer shell and membrane under it. Leave the eggs in the cool water bath for a few minutes for the water to soak under the shells and loosen them. |
