OLD - FASHIONED MEAT LOAF
Yield: 4 Generous Servings
1 2 pounds ground sirloin of beef
2 cup seltzer water
4 slices white bread, crusted and torn apart
2 tablespoons ketchup
2 teaspoon Worcestershire sauce
2 beaten eggs
Salt and pepper to taste
1 tablespoon butter
1 tablespoon all-purpose flour
14 2 ounce can diced tomatoes of your choice (garlic/onion/Mexican/Cajun/Italian, etc.)
10 ounce can beef broth

Soak the bread in the seltzer water 1 hour. Mix with the ground beef. Add ketchup, Worcestershire and beaten eggs. Sprinkle in salt and pepper. |

Form into an elongated loaf and place in a pan with 2 inch deep sides. |

Melt the butter. Stir in flour. Stir in broth, cooking over medium heat until slightly thickened. Add diced tomatoes. Pour over the loaf and bake in a preheated 350 ° F oven until done to your liking. (35-40 minutes) Remove to a platter. Cover the top with mashed potatoes. (Recipe, page ) spoon some of the gravy over and serve with a sauceboat of gravy on the side. |
