MEAT BALLS
Approximately 48 cocktail
1 2 pounds ground lean sirloin
2 pound ground lean pork
2 small onions
2 tablespoons minced parsley
2 tablespoons white horseradish
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon salt
2 teaspoon black pepper
2 eggs, beaten
1 cup fine bread crumbs
2 cup seltzer water or club soda

Combine onions, parsley, horseradish, Worcestershire, mustard, salt and pepper in a food processor and pulverize. Mix into the meat. |

Combine the salt, pepper, eggs, breadcrumbs and water in the food processor until well-blended. Mix into the meat. Do not overwork or the meat will become heavy. Form into meatballs. Refrigerate 1 hour. |

Broil, bake, or drop into a sauce to cook. |
